I have read all kinds of detailed comments on the web about using Sora STI drop levers with v brakes but I am still confused!
Can I use them and could I put "frog type" levers in the system.Similar to the Claud Butler Dalesman set-up just without the Canti Brakes. Thanks for the advice.

Road drop levers, STI or otherwise, pull enough cable for sidepulls, dual pivot sidepulls, or cantilever brakes.
V brakes require a longer cable pull, either from dedicated Vbrake levers, or you can use road levers and eg."travel agents", but this system gets mixed reviews.
What are "frog type levers"? Frog- leg cantilevers? Or do you mean cyclo cross additional bar top brake levers?

Mini v brakes work with standard road brake levers. I'm running Tektro mini v's with std pull levers on my Tricross. I paid about £13/wheel for them.

Ive never played with mini V's. How much clearance do you get to run a biggish tyre and mudguards?

How big is big? I use 28 with mudguards and loads of clearance. It depends on your frame builder. My mounts are set so the brake blocks are at the bottom of the slot. Mini Vs are 85mm long, so you can measure your own setup to see if they would work.

Useful things, numbers, 85mm, yes, why didnt I think of that, I can see they would do 28mm tyres.
However on the roughstuff bike the noodles rattle on the mudguards with fullsize V brakes, so thats a non-starter. Big clearances, mind, theres some real sticky mud about.

So why not use cantilevers? They give you lots of clearance and work with road brake levers, that is the point of them really and you can put the extra interrupter levers on as well.

I have Sora fitted to my Specialized Sirus. It came with straight bars and I converted it to drops.
I had v brakes with travel agents.
After a couple of years I swapped the v brakes for cantis.
The v brakes were more difficult to adjust and lack the bight of the cantis.
I prefer the feel of the cantis and have more confidence in their performance.
I run the Sirus with 700x28 tyres.
