I need a front and back wheel/rim for my 21" 2005 Dawes Galaxy. But I am getting bogged down with the info and different makes/types etc.
Could any give me some advice on possible models/makes to chose. I will be using the bike to go touring with tent etc.

I am afraid that we will not be helpful...................
There are so many configurations for wheels that everyone will have a favourite or dislike that it will be complex no matter how helpful we tr to be.
I think that "Generic advice" is to sort out your budget and decide whether to go for a wheel set that is manufactured or hand built . Then select a dealer that will an discuss what you want. Then take their advice.
It is not as expensive as you think.
I have recently bought a set from Spa Cycles (Note I am already showing the bias I warned you of!) who do custom built wheelsets for touring bikes from £55 - £200.
http://www.spacycles.co.uk/products.php?plid=m2b0s141p0 shows their range.
However if you have a good LBS then they may be equally able to help.
Finally have a look at the magazines and reviews on the Internet - see the comments and criticisms. Or post on a forum, but in all these cases beware that we will be biased and that our answers may not suit you.

I too have very much liked my spa cycles wheels (endeavour rims and deore xt rear hub, schmidt dynamo hub up front.) About 6000 miles (many quite tough ones from the POV of both me and the bike) and very little wear, and a grand total of 8mins spoke key attention to keep them excactly true.
That's a nice bit of bias to show isn't it!
To show that they're not perfect, I have had truble with screeching brakes. The front one on my galaxy has done that with about every rim/brake pad combination I've tried so I can't complain but certain sorts of pads are a problem on the back too with te endeavour rims, most specifically aztec. Have found koolstop salmons work well and are silent up the back and not too bad up frnt though.

I also have endeavour rims but on tiagra hubs as my galaxy is 130 OLN. No problems at all. Where would we be without Spa Cycles?

I would just like to welcome Spa Cycles's advert back to the CTC Gazette ("Cycle").
They give advice from cyclist to cyclist.
