I've used the original down tube shifters on the Galaxy, then converted to bar ends. I find them safer then taking my hand off the handlebars to change gear, especially when trying to sprint onto a roundabout for example to get into the traffic safely.
But I have STIs on my Cervelo, and I think they are without doubt the safets option, since I can cover the brakes and the gears. Changin gear while staning going up a hill, and round a bend, is easy with the STIs, not so easy with the bar ends.
I prefer the STIs without a doubt - primarily for safety reasons in heavy traffic.
