Yup. Something Similar. about 20 years ago..but from Zeebrugge ..Route I did was Bruges, Gent(very cobbly),Brussels,Dinant in the Ardeenes(Surprising tough!),Part of Moselle Valley,(Strasbourrg,Freiburg Black Forrest (blasted trees too dense to see the view) Basel ,Litchenstein..Dont think I did more than 50 miles a day ...But you need to make allowances for site seeing in those attractive Belgium towns than achieve a strict target daily mileage ...All very pleasent but I dont have anything to compare it to..Down the Rhine may also be attractive especially in Germany

For the last days, I've been collecting all my cycling experiences into some maps : 8 very comfortable routes along rivers, canals and old railway tracks and 1 difficult one between Ghent and Brussels.

Enjoy,

1 way to get from Brussels to Ghent, but it's a quite complicated one :

I've just cycled from Basel to Rotterdam along the Rhine Route which is a Sustrans type track mostly traffic free it goes through Holland and Germany but is certainly a very good option. The track is mostly tarmaced to Mannheim(600k) after that up to Basel(200k) it's mostly rolled stone but quite rideable.
Pretty well signposted you can get excellent maps (2) of the route in german from Stanfords in Covent Garden.
The Rhine Gorge between Koblenz and Mannheim is wonderful. On the whole of the route you're never far away from a cheap and cycle frendly train if the weather gets grim. Loads of reasonable places to stay in Germany.

You'll have a great time.

I would go right down the Rhine to from Arnhem to Freiburg, then cut through the Black Forest. Cycle route 90% of the way, to Freiburg anyway.
